Sourcing story: our local suppliers

We source produce from two local farms we've worked with for years, chosen because their delivery is consistent and their quality doesn't dip when demand is high elsewhere.

Spices are sourced whole, not pre-ground, from a specialty importer — we grind small batches in-house so flavor stays fresh rather than sitting pre-ground on a shelf for months.

Meat and seafood come from suppliers we've personally visited and vetted, not just the lowest bid on a wholesale list — traceability matters to us as much as price.

This approach costs more than the cheapest available option, consistently. We think the difference shows up on the plate, and we'd rather charge honestly for quality than cut ingredients quietly.
